Gracious and Delicious is a wholesale/retail speciality food business supplying local and imported products to cafés, markets and food stores throughout Australia. It is run by Caroline and Marcus Gniel, who, inspired by their time living in Bordeaux decided to bring a little piece of French expertise home with them in the form of the Canelé. They have since expanded their reperatoire, and are now importing a mouth-watering array of foie gras, confit duck legs and rillettes. All cakes are made by Caroline at their commercial kitchen at 14 Pakington St, Geelong West.
Some call canele the new cupcake or even the new macaron. We wouldn’t be so gauche. Let’s just say the little pastry with the caramelised crust and custardy centre is being seen in all the right places. Caroline and Marcus Gniel of Gateaux de Bordeaux fell in love with the fluted pastry while living in the French wine region. Caroline asked village friends to share their recipes and tested them against internet versions. By the end of their stay, a local chef had given hers the nod, Now their Healesville-based business sells canele at farmers’ markets, cafes and food stores.
